Yes,you can change panel font color.Just open in text editor .../DoYouLikeIt/gtk-2.0/styles/panel and edit every line with FG color,put in it for example #FFFFFF,it is white.
It would not be bad if one could change color of the font on the panel because wallpapers could be dark or light... then on the dark wallpaper the light font on the panel looks better... and vice versa...
